HEALTHIER CINNAMON ROLLS

Hei og god fredag!
Helgen er rett rundt hjørnet, og jeg har kranglet med søt suget mitt hele uken. Jeg går jo som sagt på den 14 dagers detox drikken, så jeg prøver å holde meg mest mulig unna søtsaker og brus. Men altså helg er helg, så i går tok jeg saken i egne hender. Jeg laget disse kanelbollene med 50/50 lyst og grovt mel, og erstattet sukkeret med sukrin gold.

In a few hours it’s officially weekend, and I’ve been struggling with my sugar crave all week. I’m still on the 14 day detox drink, so I’m trying my best to keep away from sweets and soft drinks. But weekend means weekend, so yesterday I made cinnamon rolls. I made them with 50/50 dark and light fluor, and replaced the sugar with erythritol. 

Ingredienser: // Ingredients: 
0,5 kg siktet spelt mel // 0,5 kg siftet spelt fluor
0,5 kg sammalt speltmel // 0,5 kg wholemeal spelt fluor
1 egg // 1 egg
3 ss sukrin gold // 3tbs erythritol
200g usaltet smør // 200g unsalted butter
500 dl melk // 500 dl milk
1pk søt fersk gjær // 1 pack sweet fresh yeast

Melt the butter and add the milk, make sure it’s 37 degrees before adding the yeast
Mix all the dry ingredients in another bowl
Pour the butter, milk and yeast into the dry ingredients, and add the egg
Let the dough rise to double the size, around 45 minutes
Roll out the dough, and lubricate the butter
Sprinkle cinnamon and erythritol evenly
Set the oven to 225 degrees
Roll the dough, and cut it into 10-12 buns
Let the buns rest for about 10-15 minutes
Mash an egg in a glass, and brush the buns
Bake for about 10-12 minutes, in 225 degrees
